Post Surgery Healing Soup
With my explant surgery approaching, I want to ensure I have nutritious, easy-to-prepare meals ready for my recovery. Soups are an excellent choice for healing—they’re packed with nutrients, gentle on the digestive system, and simple to make in advance.
For this soup, I’ve kept the ingredients minimal and straightforward. After surgery, the body needs time to recover from anesthesia, which can also impact gut health. That’s why it’s so important to focus on light, easily digestible meals that still provide the essential nutrients your body needs to heal.
Soup Ingredients:
1 whole chicken (pasture raised, corn and soy free is best)
1 organic white onion, cut in half
4-5 organic garlic cloves
4 organic celery stalks, chopped
4 organic carrots, chopped
3-4 bay leaves
1 pack Palmini noodles
1 bunch organic parsley
Organic lemon
1/2 cup salt (I use Diamond salt for this recipe)
Pepper to taste (optional)
Instructions:
In a large pot, place the whole chicken and fill with enough water to mostly submerge the bird—it's okay if a few parts float or stick out.
Add the salt, onion, garlic, and bay leaves to the pot. Stir gently to combine.
Bring the mixture to a boil, then reduce the heat to medium-low, cover, and let it simmer for 1 to 1½ hours.
Once the chicken is fully cooked, carefully remove it from the pot. Strain the broth into a separate bowl to remove any solids, then return the clear broth to the pot and keep it simmering on low heat.
While the broth simmers, add the chopped carrot, celery, and palmini noodles. Let these cook gently.
Shred the chicken, removing all the meat from the bones, and dice it into small, bite-sized pieces.
Add the diced chicken back into the pot and season with freshly ground black pepper.
Turn the heat to medium-high and bring the soup to a gentle boil, then reduce the heat once more and let it simmer on low.
To serve, ladle the soup into bowls, garnish with freshly chopped parsley, and finish with a squeeze of lemon for a bright, flavorful touch. Enjoy!
