Carnivore Cookies w/Maple Buttercream Frosting
You know I am always trying to find ways to make some “cheat treats” in a healthy version. Well this “cookie” is no exception and SO EASY.
Yes this it’s a burger patty, and yes we are going to put frosting on it. Just try it, then tell me what you think…
Burger Ingredients:
1-2lbs grass fed, grass finished ground beef (2lbs if you want to make extra which I suggest you do)
2-3 tbsp salt to flavor the beef (I use Maldon)
Frosting Ingredients:
2 sticks salted grass fed butter at room temp (I like Kerrygold or Kirkland from Costco)
1/3 or 1/2 cup organic maple syrup (measure to desired sweetness)
2 tsp organic vanilla extract
1-2 tsp monkfruit powder (optional)
How to make the cookies:
Mix ground beef and salt in a bowl
Using parchment paper, portion out small palm size burgers in your hand and press onto the parchment paper to flatten. You want them thinner than a regular burger.
Preheat a stainless steel pan over med/high heat. Use the water test to make sure the pan is heated enough and the burgers won’t stick.
Cook burger patties on each side for 5-6 mins. They should get a little crust.
Once burgers are done, set aside to cool. You can also place them in the fridge to cool faster.
While your burgers are cooking, start your frosting.
Using a food processor (or you can mix by hand or use any mixer handy), add the butter, maple syrup, vanilla and optional monkfruit.
Blend until combined and taste test as you go and add more maple or monkfruit if desired.
Assemble:
Take the cooled burger patty and spread the buttercream frosting (as much as you want) on top.
