ALL MEAT, NO bean, bean dip

Ever tried a bean dip without the beans? Sounds a bit crazy, right? Well let me introduce you to my animal-based no-bean bean dip, made entirely from meat. Trust me; it’s just as delicious and even more nutritious!

Why No Beans?

Beans are high in lectins and anti-nutrients, which can be an issue for your gut. Plus, they can lead to some less-than-pleasant side effects (gas!). While soaking and cooking your own beans can help, I’ve found that sticking to an animal-based diet works best for me. Enter my "meat dip"—packed with protein and free from gassy beans!

Ingredients:

  • 1–2 lbs ground beef (opt for 2 lbs for delicious leftovers)

  • 1/2 organic white or yellow onion, chunky chopped

  • 4 organic garlic cloves, chunky chopped

  • Taco seasoning (homemade or pre-packaged)

  • 2 organic jarred red peppers

  • Grated raw cheddar (grate it yourself, don’t use pre-shredded cheese)

  • Organic salsa and/or hot sauce of choice

  • Jalapeños for topping

Instructions:

  1. Sauté Ingredients: On low heat, sauté the onions, garlic, and ground beef in a pan. Add the taco seasoning and salt generously. Taste test and add more salt as needed. Cook until the beef is browned. Don't worry about cooking the garlic and onions down too much—they will be blended later.

  2. Blend Everything: Once the beef is cooked, transfer everything to a blender. I use a Vitamix for its powerful blending capabilities. Keep stirring and blending; if it gets too thick, take breaks to stir and continue blending until you reach the desired consistency.

  3. Serve: Pour the blended mixture into a bowl and top with grated cheddar, salsa, and jalapeños. This dip is delicious on its own or served with MASA chips.

Additional Tips:

  • Homemade Taco Seasoning: If you prefer a homemade touch, mix chili powder, cumin, paprika, garlic powder, onion powder, oregano, and salt to create your own taco seasoning.

  • Spice Level: Adjust the amount of jalapeños and hot sauce to control the spice level to your liking.

  • Storage: Store any leftovers in an airtight container in the fridge. This dip tastes just as good, if not better, the next day!
