How a Low Histamine, Low Oxalate Diet Can Help Your Autoimmune Condition
What is MCAS?
Ever heard of Mast Cell Activation Syndrome, or MCAS? Neither had I until it turned my world upside down. MCAS is a condition where your mast cells—part of your immune system—go haywire and release too many chemicals, leading to symptoms like severe allergic reactions, rashes, digestive issues, difficulting breathing or swallowing, rapid heart rate, and even extreme fatigue and brain fog. For me, it all started after I got of botox poisoning. It was as if my body suddenly decided to wage war against itself.
My Journey to Recovery
When MCAS hit me, eating became a nightmare. Every meal felt like a gamble with my health. I knew I had to make some drastic changes if I wanted to get better, so I went all-in on a strict diet for three months. Here’s a peek into what my daily food looked like:
The Foods (this is what worked for me)
For the first three months, I limited my diet to these foods, and these foods only:
100% Grass-fed Beef, Bison, and Venison
Pasture-Raised, Corn and Soy-Free Eggs (fresh from a local farm)
Grass-Fed Butter
Organic Apples
Dijon Mustard
Salt
Surprisingly, sticking to these simple foods helped me to stabilize my condition. Towards the last month, I was able to introduce:
Pecans and Macadamia Nuts (1/4 cup)
Organic Coconut
Seasonal Fruits and Veggies like peaches and zucchini
Garlic and Onion
The importance of being patient and strict cannot be overstated. This diet, along with supplements, peptides, immune treatments, and nervous system therapy, worked wonders for me. After four months of being ultra-disciplined, I am now at a place where I can finally enjoy food again without fear. I still have little moments. Mostly with cured meats like the meat sticks I love for a quick snack. But my reactions aren’t scary or debilitating, they are mild.
Why a Low Histamine, Low Oxalate Diet Works
Reduces Inflammation
Autoimmune diseases are often fueled by inflammation. Foods high in histamines and oxalates can exacerbate this, turning your immune system into an overactive mess. By sticking to low histamine and low oxalate foods, you can keep inflammation at bay.
Minimizes Triggers
When you have MCAS or an autoimmune condition, your body is quick to react to triggers. High histamine foods like aged cheeses, smoked meats, and alcohol can set off a chain reaction of symptoms. Cutting these out helps your body find balance.
Boosts Nutrient Absorption
Your gut is one of the first casualties in an autoimmune battle. By choosing simple, nutrient-dense foods, you give your digestive system a much-needed break, allowing it to absorb nutrients more effectively.
Individual Healing
It's important to note that not everyone will have the same response to food. Even though eating low histamine foods might work for me, it doesn't mean it will work for everyone. You have to test out foods and pay attention to your body's response. Portion control is also a big factor—you might be able to eat a little of something but not a lot without reacting.
